When Psomas decided to expand Hollandberry beyond Minnesota, he again turned to Kramer Contracting — this time for a much larger project: converting a former Wells Fargo bank in downtown La Crosse into a full‑service restaurant.

Kramer Contracting handled the full transformation, including:

• Adaptive reuse of a drive‑through bank into a restaurant
• ​​Structural modifications for a commercial kitchen and dining room
• Exterior façade redesign to match Hollandberry’s warm, welcoming aesthetic
• ​Interior finishes inspired by the Rochester location
• Mechanical, electrical, and plumbing upgrades
• ​Space planning for customer flow, seating, and kitchen operations

The result was a completely reimagined building that still felt unmistakably “Hollandberry.”

The First Location — Rochester, Minnesota. Hollandberry Pannekoeken began in 1986 in downtown Rochester, founded by Tasos Psomas. The restaurant became known for its signature pannekoeken — Dutch oven‑baked soufflé pancakes — along with hearty breakfasts, sandwiches, and fresh muffins.

When the Rochester location needed updates and modernization over the years, Kramer Contracting was brought in to help refresh and stabilize the space. Their work included:

• Interior improvements to support kitchen efficiency
• ​Updating finishes while preserving the restaurant’s cozy Dutch‑inspired feel
• Structural and mechanical upgrades to keep the aging building functional
• ​Enhancements that allowed Hollandberry to maintain its identity while improving customer experience
